It's been a cloudy, chilly day that eventually turned into a drizzly chilly day, so I wanted something warm and comforting. I also had a busy morning volunteering in my daughter's first grade class (we cut apples for apple pie!) and then grocery shopping, so I wanted something that required very little effort. I immediately thought of the rich, delicious Chocolate Cobbler from Mommy's Kitchen. I haven't tried a recipe from there that I didn't love, so trust me when I say that this is some seriously yummy stuff. Plus, if you bake on a regular basis chances are great that you will already have everything needed to make this delicious cobbler in your kitchen!

The only thing missing from this bowl is some fresh whipped cream or vanilla bean ice cream.
Chocolate Cobbler
1 - cup self rising flour*
6 - tablespoons butter
3/4 - cup white sugar
2 - tablespoons unsweetened baking cocoa
1/2 - cup milk
1 - tsp vanilla extract
Topping
1/2 - 3/4 cup brown sugar
1/4 - cup white sugar
1/4 - cup baking cocoa
1 1/2 - cup very hot (not boiling) water
* to make self rising flour at home, mix 1 cup flour with 1 1/2 ts of baking powder and 1/2 ts of salt, then mix to combine
Preheat your oven to 350°. Add 6 tb butter to an 8x8 dish and put in oven to melt. Meanwhile, add dry ingredients to a large bowl and stir. Then add your milk and vanilla and mix well. Once butter is melted, pour mixture into dish with butter and mix, spreading to edges.
In a small bowl, mix topping ingredients and then sprinkle evenly over top of your chocolate mixture. Pour very hot water carefully over top of cobbler. It bubbles and looks sort of strange, but when it's done it's this magical brownie pudding combination. Just amazing. Cook for 30-35 minutes or until slightly jiggly.
